I’m a fairly recent convert to tofu. Prepared correctly, it can be delicious. Prepared poorly, and it’s truly horrendous.
I think part of why tofu gets such a bad rap is that when people try it at home the first time, they probably do a pretty bad job of making it. It took me several failed dishes before it was decent. Plus like, before plant-based meat was the rage, tofu was the de facto standard for vegetarian meat replacements - the tofurkey being a pretty egregious example
But a white suburban mom from the '80s making tofu for their teenager who really isn’t into it? I’m probably with Peter on this one
Smoked tofu, stir-fried tofu, or just diced tofu with an amazing sauce, there are so many ways you can make it really delicious. I’m not even a vegetarian but I still love (properly prepared) tofu!
